Ingredients
  

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold butter cubed
  • 1/2 cup cold water

For the Filling:

  • 1 cup cooked chicken shredded
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/2 cup bell peppers finely chopped
  • 1/4 cup onion finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • Salt to taste

For Assembly:

  • 1 egg for egg wash

Instructions
 

Step 1: Prepare the Dough

  • In a bowl, mix flour and salt. Add cold butter and rub it into the flour until it resembles coarse crumbs. Gradually add cold water and mix until a dough forms. Cover and chill for 20 minutes.

Step 2: Make the Filling

  • Heat olive oil in a skillet over medium heat. Add onions and garlic, cooking until soft and fragrant. Add bell peppers and cook for a few minutes.
  • Stir in shredded chicken, paprika, cumin, salt, and pepper. Cook for 5 minutes, then remove from heat and let cool slightly. Mix in shredded cheese.

Step 3: Roll the Dough

  • Roll out the chilled dough on a floured surface. Cut into circles using a cutter or glass.

Step 4: Fill the Empanadas

  • Place a spoonful of filling in the center of each dough circle. Fold over to create a نصف-moon shape and press edges with a fork to seal.

Step 5: Brush and Bake

  • Place empanadas on a lined baking tray. Brush with egg wash and bake at 180°C (350°F) for 18–20 minutes, or until golden brown.

Step 6: Serve

  • Let them cool slightly and serve warm.
