Instructions
 

Step 1: Prepare the Dough

  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy. This step is important—it creates that soft, tender texture we love.
  • Add the egg and vanilla extract, mixing until smooth. Slowly incorporate the dry ingredients into the wet mixture until a soft dough forms.

Step 2: Make the Filling

  • In a small bowl, mix the brown sugar, cinnamon, and melted butter. The mixture should resemble damp sand and smell absolutely amazing.

Step 3: Shape the Cookies

  • Scoop out a portion of dough and flatten it slightly. Add a small amount of filling in the center, then cover with another piece of dough. Seal the edges gently and roll into a ball.
