Ingredients
  

  • 3 cups cooked chicken shredded
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 1/2 cups salsa
  • 6 small flour tortillas cut into strips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream optional
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

Step 1: Prepare chicken

  • Heat olive oil in a pan and toss shredded chicken with taco seasoning, garlic powder, and cumin. Stir until well coated and warm.

Step 2: Mix filling

  • In a large bowl, combine chicken, rice, beans, corn, and half of the salsa.

Step 3: Prepare baking dish

  • Lightly grease a 9x13-inch baking dish.

Step 4: First layer

  • Add a layer of tortilla strips at the bottom of the dish.

Step 5: Add filling

  • Spread half of the chicken mixture over tortillas.

Step 6: Add cheese

  • Sprinkle a layer of cheddar and mozzarella.

Step 7: Repeat layers

  • Add another layer of tortillas, remaining filling, and more cheese.

Step 8: Top it off

  • Pour remaining salsa on top and cover with foil.

Step 9: Bake

  • Bake at 375°F (190°C) for 30–35 minutes.

Step 10: Rest and serve

  • Let it rest for 10 minutes before serving. Garnish with cilantro and sour cream if desired.
