  • 1 kg chicken cut into serving pieces
  • 2 tablespoons cooking oil
  • 4 cloves garlic minced
  • 1 medium onion sliced
  • 2 medium tomatoes chopped
  • 2 tablespoons tomato sauce
  • 3 cups chicken broth or water
  • 2 medium potatoes cubed
  • 1 ripe plantain or banana sliced, optional
  • 1 cup green beans
  • 1 cup cabbage cut into chunks
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper

Instructions
 

Step 1: Sauté Aromatics

  • Heat oil in a large pot over medium heat. Add garlic and cook until fragrant. Then add onions and sauté until soft and slightly translucent.

Step 2: Add Tomatoes

  • Stir in the chopped tomatoes and cook until they soften and release their juices. This creates a flavorful base for the stew.

Step 3: Brown the Chicken

  • Add the chicken pieces to the pot. Cook for a few minutes until lightly browned on the outside.

Step 4: Build the Broth

  • Pour in the chicken broth and add the tomato sauce. Stir well and bring to a gentle boil.
