Ingredients
  

  • 300 g rice noodles
  • 2 cups chicken breast sliced thin
  • 1 tablespoon oil
  • 1 red bell pepper sliced
  • 1 cup broccoli florets
  • 1 carrot julienned
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 teaspoon sesame oil
  • 2 green onions sliced
  • 1 tablespoon sesame seeds optional

Instructions
 

  • Cook rice noodles according to package instructions. Drain and set aside.
  • Heat oil in a large skillet or wok over medium-high heat.
  • Add sliced chicken and cook until browned and cooked through.
  • Remove chicken and set aside.
  • In the same pan, add garlic and ginger, cooking until fragrant.
  • Add bell pepper, broccoli, and carrot. Stir-fry for 3–4 minutes until slightly tender but still crisp.
  • In a bowl, mix soy sauce, honey, brown sugar, cornstarch, water, and sesame oil.
  • Return chicken to the pan and pour in the sauce.
  • Stir well and cook until the sauce thickens.
  • Add cooked rice noodles and toss until fully coated.
  • Garnish with green onions and sesame seeds.
  • Serve hot and enjoy.
