Ingredients
  

  • 1.5 pounds pork tenderloin
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 small onion sliced

Instructions
 

Step 1: Prepare the pork

  • Pat the pork tenderloin dry with paper towels. This helps the seasoning stick better.
  • Rub the pork with salt, pepper, paprika, thyme, and rosemary, making sure it’s evenly coated.

Step 2: Sear (optional but recommended)

  • Heat olive oil in a skillet over medium-high heat. Sear the pork tenderloin for 2–3 minutes on each side until lightly browned. This step adds extra flavor.

Step 3: Prepare the crock pot

  • Place the sliced onions and garlic at the bottom of the crock pot. This creates a flavorful base for the pork.

Step 4: Add the pork

  • Place the seasoned pork tenderloin on top of the onions.

Step 5: Make the sauce

  • In a small bowl, mix chicken broth, soy sauce, Dijon mustard, and honey. Pour this mixture over the pork.

Step 6: Slow cook

  • Cover and cook on low for 6 hours or on high for 3–4 hours, until the pork is tender and fully cooked.
