Equipment

  • Mixing bowls
  • Whisk or hand mixer
  • Saucepan
  • Measuring cups and spoons
  • Fine mesh strainer (optional)
  • Pitcher or glass bottle for serving
  • Ladle
  • Glasses for serving

Ingredients

  • 4 large eggs separated
  • 1/2 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup Evan Williams bourbon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • A pinch of salt

Optional garnish:

  • Freshly grated nutmeg
  • Cinnamon sticks
  • Whipped cream

Instructions

Step 1: Whisk the Egg Yolks

  • In a mixing bowl, whisk the egg yolks with half of the sugar until the mixture becomes pale and slightly thick. This step helps create that smooth, creamy base.

Step 2: Heat the Milk and Cream

  • In a saucepan, gently heat the milk and cream over medium heat. Do not let it boil—just warm it until it’s slightly steaming.

Step 3: Temper the Eggs

  • Slowly pour a little of the warm milk mixture into the egg yolks while whisking constantly. This prevents the eggs from scrambling.

Step 4: Cook the Mixture

  • Pour everything back into the saucepan and cook over low heat, stirring continuously until it thickens slightly.

Step 5: Add Flavor

  • Remove from heat and stir in the vanilla extract, nutmeg, and a pinch of salt. Let it cool for a few minutes.

Step 6: Add Bourbon

  • Once slightly cooled, stir in the Evan Williams bourbon. This adds warmth and depth to the drink.

Step 7: Whip Egg Whites

  • In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue beating until glossy.

Step 8: Combine

  • Gently fold the whipped egg whites into the eggnog mixture. This gives it a light, airy texture.

Step 9: Chill and Serve

  • Refrigerate for at least 1 hour before serving. Pour into glasses and garnish with nutmeg or cinnamon.
