Equipment

  • Oven-safe skillet (preferably cast iron)
  • Rolling Pin
  • Sharp knife or peeler
  • Cutting board
  • Mixing bowl
  • Spatula
  • Baking sheet (optional, for safety under skillet)

Ingredients

For the Apples and Caramel:

  • 6 medium apples firm varieties like Granny Smith or Golden Delicious
  • 3/4 cup granulated sugar
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon optional

For the Pastry:

  • 1 sheet puff pastry store-bought or homemade
  • 1 tablespoon flour for dusting

Instructions

Step 1: Prepare the Apples

  • Peel, core, and cut the apples into halves or quarters. Try to keep them uniform so they cook evenly.

Step 2: Make the Caramel

  • In an oven-safe skillet, add the sugar over medium heat. Let it melt slowly without stirring too much. Once it turns a deep golden color, add the butter carefully and stir until smooth.
  • Add vanilla extract and cinnamon if using.

Step 3: Arrange the Apples

  • Place the apples tightly into the caramel, cut side up. Let them cook for about 10–15 minutes until they begin to soften and absorb the caramel.

Step 4: Add the Pastry

  • Roll out the puff pastry slightly and place it over the apples, tucking the edges inside the pan.

Step 5: Bake

  • Transfer the skillet to a preheated oven at 190°C (375°F). Bake for 25–30 minutes until the pastry is golden and crisp.

Step 6: Flip the Tarte

  • Let it cool for 5 minutes, then carefully invert onto a serving plate. Be cautious—the caramel will be hot.
