For the Cauliflower

  • 1 large head cauliflower cut into florets
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • Cooking spray or oil for crisping

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon honey
  • 1 garlic clove minced
  • 1 teaspoon lime juice

  • Chopped green onions
  • Sesame seeds
  • Fresh cilantro
  • Extra sriracha drizzle

Instructions
 

Step 1: Prepare the Cauliflower

  • Wash the cauliflower thoroughly and cut it into medium-sized florets. Try to keep them similar in size so they cook evenly.
  • Pat the florets dry using paper towels. This helps the coating stick better and creates a crispier texture.

Step 2: Make the Batter

  • In a large mixing bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  • The batter should be smooth and slightly thick, similar to pancake batter.

Step 3: Coat the Cauliflower

  • Dip each cauliflower floret into the batter, making sure it is fully coated.
  • Then roll it in panko breadcrumbs for extra crunch.
  • Place the coated florets on a parchment-lined baking tray.

Step 4: Cook Until Crispy

  • For baking:
  • Preheat the oven to 220°C (425°F).
  • Lightly spray the cauliflower with cooking oil.
  • Bake for 25 minutes, flipping halfway through until golden brown and crispy.
  • For air frying:
  • Cook at 200°C (400°F) for about 15 to 18 minutes.
  • For deep frying:
  • Fry in hot oil until golden and crispy.

Step 5: Make the Bang Bang Sauce

  • In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, minced garlic, and lime juice.
  • Taste and adjust the spice level if needed.

Step 6: Toss and Serve

  • Once the cauliflower is crispy, drizzle or toss it with the bang bang sauce.
  • Top with sesame seeds, green onions, or cilantro.
  • Serve immediately while hot and crunchy.
