For the Cauliflower
- 1 large head cauliflower cut into florets
- 1 cup all-purpose flour
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup panko breadcrumbs
- Cooking spray or oil for crisping
For the Bang Bang Sauce
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon honey
- 1 garlic clove minced
- 1 teaspoon lime juice

Step 1: Prepare the Cauliflower
Wash the cauliflower thoroughly and cut it into medium-sized florets. Try to keep them similar in size so they cook evenly.
Pat the florets dry using paper towels. This helps the coating stick better and creates a crispier texture.
Step 2: Make the Batter
In a large mixing bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper.
The batter should be smooth and slightly thick, similar to pancake batter.
Step 3: Coat the Cauliflower
Dip each cauliflower floret into the batter, making sure it is fully coated.
Then roll it in panko breadcrumbs for extra crunch.
Place the coated florets on a parchment-lined baking tray.
Step 4: Cook Until Crispy
For baking:
Preheat the oven to 220°C (425°F).
Lightly spray the cauliflower with cooking oil.
Bake for 25 minutes, flipping halfway through until golden brown and crispy.
For air frying:
Cook at 200°C (400°F) for about 15 to 18 minutes.
For deep frying:
Fry in hot oil until golden and crispy.
Step 5: Make the Bang Bang Sauce
In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, honey, minced garlic, and lime juice.
Taste and adjust the spice level if needed.
Step 6: Toss and Serve
Once the cauliflower is crispy, drizzle or toss it with the bang bang sauce.
Top with sesame seeds, green onions, or cilantro.
