Ingredients
  

  • 500 g beef sirloin or fillet thinly sliced
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium onion finely sliced
  • 2 garlic cloves minced
  • 250 g mushrooms sliced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 200 ml beef stock
  • 150 ml sour cream
  • 1 teaspoon paprika
  • Fresh parsley chopped (for garnish)
  • Egg noodles or rice for serving

Instructions
 

Step 1: Prepare the beef

  • Slice the beef into thin strips and season with salt and black pepper. Make sure the slices are even so they cook quickly.

Step 2: Sear the beef

  • Heat olive oil in a large pan over high heat. Add the beef in batches and sear quickly for about 1–2 minutes. Remove and set aside.

Step 3: Cook the aromatics

  • In the same pan, add butter and cook the sliced onion until soft. Add garlic and cook for another minute.

Step 4: Add mushrooms

  • Add the sliced mushrooms and cook until they release their moisture and turn golden brown.

Step 5: Build the sauce

  • Stir in paprika, Dijon mustard, and Worcestershire sauce. Pour in the beef stock and let it simmer for a few minutes.

Step 6: Add creaminess

  • Lower the heat and stir in the sour cream. Mix gently to create a smooth, creamy sauce.

Step 7: Combine everything

  • Return the beef to the pan and let it warm through for a couple of minutes.

Step 8: Serve

  • Sprinkle with fresh parsley and serve over egg noodles or rice.
