  • 2 tablespoons unsalted butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 large head broccoli about 500g, chopped into florets
  • 3 cups vegetable or chicken stock
  • 1/2 cup whole milk
  • 100 g stilton cheese crumbled
  • Salt to taste
  • Freshly ground black pepper to taste

Optional additions:

  • 1 small potato for extra thickness
  • Fresh chives for garnish

Step 1: Prepare your ingredients

  • Start by washing and chopping the broccoli into small, even florets. Finely dice the onion and mince the garlic. Having everything ready makes the cooking process smooth.

Step 2: Build the flavor base

  • In a large pot, melt the butter over medium heat. Add the chopped onion and cook gently for about 5–7 minutes until soft and translucent. This step builds the base flavor of your soup.

Step 3: Add garlic

  • Stir in the minced garlic and cook for another minute. The aroma at this stage is warm and inviting—don’t rush it.

Step 4: Add broccoli and stock

  • Add the broccoli florets to the pot and pour in the stock. Bring everything to a gentle boil, then reduce the heat and let it simmer for 15–20 minutes until the broccoli is tender.

Step 5: Blend until smooth

  • Remove the pot from heat and blend the soup until smooth using an immersion blender or a standard blender. Take your time here—the smoother the soup, the more luxurious the texture.

Step 6: Add milk and stilton

  • Return the soup to low heat. Stir in the milk and crumbled stilton cheese. Let it melt slowly, stirring gently until fully incorporated.

Step 7: Season and serve

  • Season with salt and freshly ground black pepper. Taste and adjust as needed. Serve warm, garnished with chives if desired.
