Ingredients
  

For the Chocolate Semifreddo

  • 7 ounces dark chocolate chopped
  • 4 large egg yolks
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • Pinch of salt

Instructions
 

Step 1: Prepare the Pan

  • Line a loaf pan with plastic wrap.
  • Leave extra wrap hanging over the edges so the semifreddo can be lifted out easily later.

Step 2: Melt the Chocolate

  • Place the chopped dark chocolate into a heatproof bowl.
  • Melt gently over simmering water or microwave in short intervals.
  • Stir until smooth and glossy.
  • Allow it to cool slightly.

Step 3: Whip the Cream

  • In a large bowl, whip the heavy cream until soft peaks form.
  • Do not overwhip.
  • The cream should stay smooth and airy.
  • Place in the refrigerator while preparing the egg mixture.

Step 4: Prepare the Egg Mixture

  • In another heatproof bowl, whisk egg yolks, whole eggs, sugar, vanilla extract, and salt.
  • Place the bowl over simmering water.
  • Whisk constantly for about 5 to 7 minutes until thick, pale, and slightly fluffy.
  • Remove from heat.

Step 5: Add the Chocolate

  • Slowly fold the melted chocolate into the egg mixture.
  • Stir gently until fully combined.
  • The mixture should look smooth and silky.

Step 6: Fold in the Cream

  • Gently fold the whipped cream into the chocolate mixture in batches.
  • Use a rubber spatula and light movements to keep the mixture airy.
  • This step creates the signature semifreddo texture.

Step 7: Freeze

  • Pour the mixture into the prepared loaf pan.
  • Smooth the top.
  • Cover with plastic wrap.
  • Freeze for at least 6 hours or overnight.

Step 8: Slice and Serve

  • Remove the semifreddo from the freezer about 10 minutes before serving.
  • Lift it from the pan using the plastic wrap.
  • Slice with a warm sharp knife.
  • Top with chocolate shavings, berries, or cocoa powder.
