Equipment

  • Large skillet or sauté pan
  • Sharp knife
  • Cutting board
  • Vegetable peeler
  • Wooden spoon or spatula
  • Measuring spoons
  • Small bowl
  • Tongs

Ingredients

For the Glazed Carrots

  • 1 ½ pounds carrots peeled and sliced diagonally
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 2 garlic cloves minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons water
  • 1 teaspoon lemon juice

Optional Additions

  • 1 tablespoon honey
  • Pinch of chili flakes
  • Orange zest
  • Toasted pecans

Instructions

Step 1: Prepare the Carrots

  • Peel the carrots and slice them diagonally into even pieces.
  • Cutting them evenly helps everything cook at the same rate.

Step 2: Heat the Pan

  • Place a large skillet over medium heat.
  • Add olive oil and butter.
  • Once the butter melts and begins foaming slightly, add the carrots.

Step 3: Cook the Carrots

  • Stir the carrots so they’re coated in the butter.
  • Cook for about 5 minutes, stirring occasionally.
  • The carrots should begin softening slightly.

Step 4: Add Garlic and Sugar

  • Add minced garlic and brown sugar.
  • Stir well so the carrots become evenly coated.
  • The sugar will begin melting into the butter to form a glossy glaze.

Step 5: Add Water

  • Pour in the water and lower the heat slightly.
  • Cover the pan and cook for about 8 minutes.
  • This helps soften the carrots while keeping them moist.

Step 6: Caramelize the Glaze

  • Remove the lid and increase the heat slightly.
  • Cook for another 5 minutes, stirring often.
  • The glaze should thicken and cling to the carrots while the edges caramelize beautifully.

Step 7: Finish with Herbs and Lemon

  • Stir in fresh thyme, parsley, black pepper, and lemon juice.
  • The herbs brighten the flavor while the lemon balances the sweetness.

Step 8: Serve Warm

  • Transfer the glazed carrots to a serving dish.
  • Spoon extra glaze from the pan over the top.
  • Serve immediately while warm and glossy.
