For the Glazed Carrots
- 1 ½ pounds carrots peeled and sliced diagonally
- 3 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 2 garlic cloves minced
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh thyme leaves
- 1 tablespoon chopped fresh parsley
- 2 tablespoons water
- 1 teaspoon lemon juice
Optional Additions
- 1 tablespoon honey
- Pinch of chili flakes
- Orange zest
- Toasted pecans
Step 1: Prepare the Carrots
Step 2: Heat the Pan
Place a large skillet over medium heat.
Add olive oil and butter.
Once the butter melts and begins foaming slightly, add the carrots.
Step 3: Cook the Carrots
Stir the carrots so they’re coated in the butter.
Cook for about 5 minutes, stirring occasionally.
The carrots should begin softening slightly.
Step 4: Add Garlic and Sugar
Add minced garlic and brown sugar.
Stir well so the carrots become evenly coated.
The sugar will begin melting into the butter to form a glossy glaze.
Step 5: Add Water
Pour in the water and lower the heat slightly.
Cover the pan and cook for about 8 minutes.
This helps soften the carrots while keeping them moist.
Step 6: Caramelize the Glaze
Remove the lid and increase the heat slightly.
Cook for another 5 minutes, stirring often.
The glaze should thicken and cling to the carrots while the edges caramelize beautifully.
Step 7: Finish with Herbs and Lemon
Stir in fresh thyme, parsley, black pepper, and lemon juice.
The herbs brighten the flavor while the lemon balances the sweetness.
Step 8: Serve Warm
Transfer the glazed carrots to a serving dish.
Spoon extra glaze from the pan over the top.
Serve immediately while warm and glossy.
