Ingredients
  

For the Green Beans

  • 1 pound fresh green beans trimmed
  • 1 teaspoon salt
  • Water for boiling
  • Ice water for blanching

For the Mustard Dressing

  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon white wine vinegar
  • 1 small garlic clove finely minced
  • 1 small shallot finely chopped
  • 1 teaspoon honey
  • 1/4 teaspoon black pepper
  • Salt to taste

  • Toasted almonds
  • Fresh parsley
  • Lemon zest
  • Parmesan shavings

Instructions
 

Step 1: Prepare the Green Beans

  • Wash the green beans thoroughly and trim the ends.
  • I usually line them up in small bundles and trim them together to save time.
  • Bring a large pot of salted water to a rolling boil.
  • The salted water is important because it seasons the beans while also helping maintain their bright green color.

Step 2: Blanch the Green Beans

  • Add the green beans to the boiling water and cook for about 3 to 4 minutes.
  • You want them tender but still slightly crisp.
  • Do not overcook them. Mushy green beans completely change the personality of this dish.
  • Immediately transfer the beans into a bowl filled with ice water.
  • This stops the cooking process and locks in that beautiful green color.
  • After a couple of minutes, drain the beans well.

Step 3: Make the Mustard Dressing

  • Heat a small skillet over medium heat.
  • Add the butter and olive oil.
  • Once melted, add the chopped shallot and cook for 2 minutes until softened.
  • Stir in the garlic and cook for about 30 seconds.
  • Be careful not to burn it because garlic turns bitter very quickly.
  • Whisk in the Dijon mustard, whole grain mustard, white wine vinegar, honey, salt, and black pepper.
  • The dressing should look glossy and smooth.
  • Taste it and adjust the seasoning if needed.

Step 4: Toss Everything Together

  • Add the drained green beans into the skillet.
  • Toss them gently until every bean is coated in the mustard dressing.
  • Cook for another minute just to warm everything through.

Step 5: Finish and Serve

  • Transfer the green beans to a serving plate.
  • Top with toasted almonds, lemon zest, or parsley if desired.
  • Serve immediately while warm.
