Equipment

  • Outdoor grill or grill pan
  • Tongs or fish spatula
  • Mixing bowl
  • Basting brush
  • Knife and cutting board
  • Plate for resting

Ingredients

  • 2 salmon fillets about 180g each
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon paprika
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh thyme optional

Instructions

Step 1: Prepare the marinade

  • In a small bowl, mix olive oil, minced garlic, lemon juice, lemon zest, paprika, salt, and black pepper. This simple marinade is fresh, bright, and full of flavor.

Step 2: Prep the salmon

  • Pat the salmon fillets dry using paper towels. This helps the fish grill properly. Brush the marinade generously over both sides of the salmon.

Step 3: Preheat the grill

  • Heat your grill to medium-high. Lightly oil the grates to prevent sticking.

Step 4: Grill the salmon

  • Place the salmon skin-side down on the grill. Let it cook undisturbed for about 5–6 minutes. This helps develop that slightly crispy texture.
  • Flip carefully and cook for another 4–5 minutes until the salmon is cooked through but still moist.

Step 5: Finish and serve

  • Remove from the grill and let it rest for a couple of minutes. Sprinkle fresh parsley and thyme on top and serve with extra lemon wedges.
