Ingredients
  

  • 2 salmon fillets about 180g each, skin-on
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic crushed
  • 1 teaspoon fresh thyme or parsley
  • 1 tablespoon lemon juice

Instructions
 

Step 1: Prepare the salmon

  • Pat the salmon fillets dry with paper towels. This step is essential for getting that crispy skin. Season both sides generously with salt and black pepper.

Step 2: Heat the pan

  • Place your skillet over medium-high heat and add olive oil. Let it heat until shimmering but not smoking.

Step 3: Sear the salmon

  • Place the salmon skin-side down in the pan. Press it gently with a spatula for a few seconds to keep the skin flat. Cook for about 5–6 minutes without moving it.

Step 4: Flip and add butter

  • Flip the salmon carefully. Add butter, garlic, and thyme to the pan. As the butter melts, tilt the pan slightly and use a spoon to baste the salmon with the flavored butter.

Step 5: Finish cooking

  • Cook for another 2–3 minutes until the salmon is just cooked through but still moist inside.

Step 6: Add lemon and serve

  • Drizzle lemon juice over the salmon and remove from heat. Serve immediately.
