For the Halibut
- 4 halibut fillets 6 oz each
- 2 large Yukon Gold potatoes
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 3 garlic cloves smashed
- 2 teaspoons fresh thyme leaves
- Salt to taste
- Black pepper to taste
- 1 tablespoon lemon juice

Step 1: Prepare the Potatoes
Peel the Yukon Gold potatoes.
Using a mandoline slicer or sharp knife, slice the potatoes very thinly.
