  • 1 tbsp coarse salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 onion sliced
  • 1 cup chicken stock
  • 1 tbsp lemon juice

Instructions
 

Step 1: Prepare the Pork

  • Start by patting the pork loin dry with paper towels. This step is key for achieving that golden crust. Rub the meat with salt, pepper, and paprika, making sure every side is evenly coated.

Step 2: Build the Flavor Base

  • In a small bowl, mix garlic, rosemary, thyme, olive oil, and Dijon mustard into a paste. Massage this mixture into the pork loin, letting it soak into the surface.

Step 3: Sear the Pork

  • Heat an oven-safe skillet over medium-high heat. Add a bit of olive oil, then sear the pork loin on all sides until browned—about 2–3 minutes per side. This locks in juices and builds flavor.

Step 4: Add Aromatics

  • Remove the pork briefly and add sliced onions to the skillet. Let them soften slightly, then place the pork back on top. Add butter and chicken stock to the pan.

Step 5: Roast to Perfection

  • Transfer the skillet to a preheated oven at 200°C (400°F). Roast for about 1 hour, basting occasionally with the pan juices.

Step 6: Check Doneness

  • Use a meat thermometer to ensure the internal temperature reaches 63°C (145°F). Remove from oven and let rest for 10–15 minutes.
