  • 400 g fresh salmon fillet skinless, boneless
  • 1 small potato boiled and mashed
  • 1 small onion finely chopped

  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 egg
  • 3 tablespoons breadcrumbs

Step 1: Prepare the Salmon

  • Cook the salmon lightly by steaming or pan-searing until just done. Let it cool, then flake it gently with a fork.

Step 2: Prepare the Base

  • In a mixing bowl, add the mashed potato, chopped onion, garlic, parsley, dill, lemon zest, and lemon juice.

Step 3: Combine Ingredients

  • Add the flaked salmon into the mixture. Crack in the egg and sprinkle in breadcrumbs. Season with salt and pepper.
  • Mix gently until everything comes together. Avoid overmixing—you want to keep the texture light.

Step 4: Shape the Cakes

  • Divide the mixture into equal portions and shape into small patties. Place them on a plate and chill for 10–15 minutes to firm up.

Step 5: Cook the Salmon Cakes

  • Heat olive oil in a skillet over medium heat. Cook the patties for about 3–4 minutes on each side until golden brown and crisp.
