For the Salmon En Croute
- 1 large salmon fillet about 600g, skinless
- 1 sheet puff pastry ready-rolled
- 1 egg for egg wash
- Salt and black pepper to taste
For the Filling
- 150 g fresh spinach
- 2 tablespoons cream cheese
- 1 tablespoon Dijon mustard
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 tablespoon fresh dill chopped
- Zest of 1 lemon
Step 1: Prepare the Filling
Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant. Add spinach and cook until wilted. Remove from heat and let it cool slightly.
Once cooled, mix in cream cheese, Dijon mustard, dill, lemon zest, salt, and pepper. Stir until smooth and well combined.
Step 2: Prepare the Salmon
Step 3: Prepare the Pastry
Roll out the puff pastry slightly if needed. Place it on parchment paper.
Spread the spinach mixture evenly over the center of the pastry, leaving space around the edges.
Step 4: Assemble
Place the salmon fillet on top of the filling. Carefully fold the pastry over the salmon, sealing the edges tightly.
Turn it over so the seam is underneath.
