Ingredients
  

  • 2 salmon steaks 200–250g each
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 garlic cloves crushed
  • 1 sprig fresh thyme or rosemary
  • 1 teaspoon lemon juice

Instructions
 

Step 1: Prepare the Salmon

  • Pat the salmon steaks completely dry using paper towels. This step is crucial—moisture prevents proper searing.
  • Season both sides generously with salt and black pepper. Let them rest at room temperature for about 5 minutes.

Step 2: Heat the Pan

  • Place your pan over medium-high heat and add olive oil. Let it heat until shimmering.

Step 3: Sear the Salmon

  • Carefully place the salmon steaks into the pan. You should hear an immediate sizzle.
  • Let them cook without moving for 4–5 minutes. This is where the crust forms.

Step 4: Flip Carefully

  • Flip the salmon gently using a spatula or tongs. Cook for another 3–4 minutes.

Step 5: Add Butter and Aromatics

  • Add butter, garlic, and herbs. Tilt the pan slightly and use a spoon to baste the salmon continuously.

Step 6: Finish and Rest

  • Remove from heat and let rest for 1–2 minutes. Finish with a squeeze of lemon juice.
