Ingredients
  

  • 4 large eggs
  • 2 tablespoons unsalted butter cold, cut into cubes
  • 2 tablespoons crème fraîche
  • 80 g smoked salmon thinly sliced
  • 1 tablespoon chopped chives
  • Salt to taste
  • Freshly ground black pepper
  • 2 slices of sourdough bread or brioche

  • A squeeze of lemon juice
  • A drizzle of olive oil

Step 1: Crack and Prepare

  • Crack the eggs into a saucepan while it’s still cold. Do not pre-whisk them—this is part of the technique that makes the texture so unique.
  • Add the butter cubes directly into the pan with the eggs.

Step 2: Start Cooking Gently

  • Place the pan over medium-low heat. Using your spatula, begin stirring slowly and continuously. Make sure you scrape the bottom and sides of the pan.

Step 3: Control the Heat

  • Every 20–30 seconds, remove the pan from the heat while continuing to stir. Then return it to the heat. This prevents overcooking and keeps the eggs creamy.

Step 4: Build the Texture

  • After about 4–5 minutes, the eggs will start to thicken into soft curds. Keep stirring gently. The mixture should look glossy and slightly loose.

Step 5: Add Crème Fraîche

  • Remove the pan from heat and stir in the crème fraîche. This stops the cooking process and adds a rich, tangy creaminess.

Step 6: Season

  • Now add salt and freshly ground black pepper. Be careful with salt since smoked salmon is already salty.

Step 7: Toast the Bread

  • While the eggs rest, toast your bread until golden and crisp.

Step 8: Assemble

  • Spoon the scrambled eggs onto the toast. Gently layer slices of smoked salmon on top.

Step 9: Garnish and Serve

  • Finish with chopped chives and a light squeeze of lemon if desired. Serve immediately.
