Ingredients
  

  • 400 g spaghetti
  • 500 g ground beef
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot finely diced
  • 1 celery stalk finely diced
  • 2 tablespoons tomato paste
  • 400 g canned chopped tomatoes
  • 150 ml beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • 1 teaspoon sugar optional
  • Fresh parsley or basil chopped (for garnish)
  • Grated Parmesan cheese for serving

Instructions
 

Step 1: Prepare the base

  • Heat olive oil in a large pan over medium heat. Add onion, carrot, and celery. Cook gently for 8–10 minutes until softened. This step builds the foundation of flavor.

Step 2: Add garlic

  • Stir in the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn it.

Step 3: Brown the beef

  • Add the ground beef and cook over medium-high heat. Break it up with a spoon and let it brown properly. Don’t rush this step—the browning adds richness.

Step 4: Add tomato paste

  • Stir in tomato paste and cook for 1–2 minutes. This deepens the tomato flavor and removes raw acidity.

Step 5: Build the sauce

  • Add chopped tomatoes, beef stock, oregano, and basil. Season with salt and pepper. Stir well.

Step 6: Simmer

  • Lower the heat and let the sauce simmer gently for about 1 hour. Stir occasionally. Add a pinch of sugar if needed to balance acidity.

Step 7: Cook the pasta

  • Boil spaghetti in salted water until al dente. Reserve a little pasta water before draining.

Step 8: Combine and serve

  • Toss pasta with sauce or spoon sauce on top. Add a splash of pasta water if needed for consistency. Garnish with herbs and Parmesan.
