Ingredients
  

For the salmon:

  • 2 salmon fillets about 180g each
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil

For the teriyaki sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon mirin or rice vinegar
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

For the soba noodles:

  • 150 g soba noodles
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar

For garnish:

  • Sesame seeds
  • Sliced green onions

Instructions
 

Step 1: Cook the soba noodles

  • Bring a pot of water to a boil and cook the soba noodles according to package instructions. Once done, drain and rinse under cold water to stop the cooking process. Toss with sesame oil, soy sauce, and rice vinegar. Set aside.

Step 2: Prepare the teriyaki sauce

  • In a bowl, mix soy sauce, honey, brown sugar, mirin, ginger, garlic, and sesame oil. Add the cornstarch mixture and stir well.

Step 3: Prepare the salmon

  • Pat the salmon fillets dry and season with salt and black pepper.

Step 4: Sear the salmon

  • Heat olive oil in a pan over medium-high heat. Place the salmon skin-side down and cook for 4–5 minutes until crispy. Flip and cook for another 2–3 minutes.

Step 5: Add the sauce

  • Pour the teriyaki sauce into the pan. Let it simmer and thicken while spooning it over the salmon. The glaze should become glossy and slightly sticky.

Step 6: Assemble the dish

  • Place the soba noodles in a bowl, top with the glazed salmon, and drizzle extra sauce over everything.

Step 7: Garnish and serve

  • Sprinkle sesame seeds and green onions on top. Serve warm.
