Ingredients
  

  • 2 salmon fillets 180–200g each
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon mirin optional but recommended
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic minced
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil for cooking
  • 1 teaspoon cornstarch optional, for thicker sauce
  • 2 tablespoons water
  • 1 teaspoon sesame seeds for garnish
  • 2 green onions sliced

Instructions
 

Prepare the Sauce

  • In a small bowl, mix soy sauce, honey, mirin, ginger, garlic, sesame oil, and water. If you prefer a thicker glaze, stir in the cornstarch.
  • Set aside—this will become your beautiful teriyaki glaze.

Prep the Salmon

  • Pat the salmon fillets dry with paper towels. This step is important—it helps the fish sear properly.
  • Season lightly with salt and pepper.

Heat the Pan

  • Place your pan over medium-high heat and add the vegetable oil. Let it heat until shimmering but not smoking.

Sear the Salmon

  • Place the salmon skin-side down in the pan. Let it cook undisturbed for about 4–5 minutes.
  • You’ll notice the edges turning opaque and the skin becoming crispy.

Flip Carefully

  • Gently flip the salmon and cook for another 2–3 minutes.
  • At this stage, the fish should be nearly cooked through.

Add the Sauce

  • Pour the prepared teriyaki sauce into the pan. Reduce the heat slightly.

Baste and Glaze

  • As the sauce begins to bubble, spoon it over the salmon repeatedly. This helps build that glossy coating.
  • Cook for another 2–3 minutes until the sauce thickens and clings to the fish.

Garnish and Serve

  • Remove from heat and sprinkle with sesame seeds and green onions.
  • Serve immediately while warm and glossy.
