Ingredients
  

  • 2 fresh trout fillets skin-on
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic crushed
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme leaves
  • Juice of 1/2 lemon
  • Salt to taste
  • Black pepper to taste
  • Lemon wedges for serving

Instructions
 

Step 1: Prepare the Trout

  • Pat the trout fillets dry with paper towels. This is essential for getting that crispy skin. Season both sides with salt and black pepper.

Step 2: Heat the Pan

  • Place your skillet over medium-high heat. Add olive oil and let it heat until shimmering but not smoking.

Step 3: Cook Skin-Side Down

  • Carefully place the trout fillets skin-side down. Press gently with a spatula for the first 20–30 seconds to prevent curling. Cook for about 4–5 minutes until the skin is crispy.

Step 4: Flip and Add Butter

  • Flip the fillets and reduce the heat slightly. Add butter, garlic, and thyme to the pan.

Step 5: Baste for Flavor

  • Tilt the pan slightly and use a spoon to baste the trout with the melted butter. Do this for 2–3 minutes until the fish is cooked through.

Step 6: Finish with Lemon and Herbs

  • Remove from heat and drizzle with fresh lemon juice. Sprinkle chopped parsley over the top.

Step 7: Serve Immediately

  • Serve the trout hot with lemon wedges on the side.
