Preheat your oven to 180°C (350°F).
Heat oil in a large skillet over medium heat.
Add chopped onion and cook until soft and slightly golden.
Stir in garlic and cook for another minute.
Add ground beef and cook until browned, breaking it apart as it cooks.
Season with salt, pepper, paprika, and thyme.
In a bowl, mix cream of mushroom soup with milk until smooth.
Lightly grease your baking dish.
Layer half of the sliced potatoes on the bottom.
Add half of the cooked beef mixture over the potatoes.
Pour a portion of the creamy sauce over the layer.
Repeat layers with remaining potatoes, beef, and sauce.
Cover with foil and bake for 45 minutes.
Remove foil, sprinkle cheese on top, and bake for another 15 minutes until golden and bubbly.
Let it rest for 10 minutes before serving.
