- 1 cup unsalted butter softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup finely ground almonds optional but recommended
- 1/2 cup semi-sweet chocolate chips for dipping
- 1 teaspoon coconut oil or butter for melting chocolate
Step 1: Prepare the Dough
In a large bowl, beat the softened butter and powdered sugar together until light and fluffy. This step is important because it creates the soft texture of the cookies.
Add the vanilla extract and almond extract, mixing until fully combined. The aroma at this stage is already amazing—sweet, nutty, and comforting.
Step 2: Combine Dry Ingredients
In a separate bowl, whisk together the flour, salt, and ground almonds. Slowly add the dry mixture to the butter mixture, mixing until a soft dough forms.
The dough should be smooth and slightly soft but not sticky. If it feels too soft, chill it for 15–20 minutes.
Step 3: Shape the Leaves
Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use a knife or leaf-shaped cutter to create leaf designs.
To make them look realistic, gently press lines into each cookie using a fork or toothpick. This is my favorite part—it’s where creativity comes in.
Step 4: Bake
Place the shaped cookies onto a lined baking tray, leaving a little space between each one.
Bake in a preheated oven at 350°F (175°C) for 10–12 minutes, or until the edges are lightly golden.
Let them cool completely on a rack before moving to the next step.
Step 5: Dip in Chocolate
Melt the chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
Dip half of each cookie into the melted chocolate and place them on parchment paper to set. You can also drizzle chocolate on top for a decorative touch.
Allow the chocolate to harden completely before serving.
