Ingredients
  

  • 10 medium tortillas or spring roll sheets
  • 1 cup boiled and mashed potatoes
  • ½ cup boiled corn kernels
  • ½ cup finely chopped capsicum bell peppers
  • ½ cup finely chopped onions
  • 1 teaspoon garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika or chili powder
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh coriander
  • 1 tablespoon olive oil
  • Oil for frying or brush for baking

Instructions
 

Step 1: Prepare the Filling

  • Heat olive oil in a pan over medium heat. Add chopped onions and sauté until soft and slightly golden. Add garlic paste and cook until fragrant.

Step 2: Add Vegetables and Spices

  • Add capsicum, corn, and mashed potatoes. Mix well. Sprinkle cumin, paprika, black pepper, and salt. Cook for 3–4 minutes so flavors blend together.

Step 3: Add Cheese and Herbs

  • Turn off heat and mix in mozzarella cheese and chopped coriander. The heat will slightly melt the cheese, creating a creamy texture.

Step 4: Assemble the Rolls

  • Place a tortilla or sheet on a flat surface. Add 2–3 tablespoons of filling in the center. Roll tightly, folding in the sides to seal.

Step 5: Cook the Rolls

  • You can fry, bake, or air fry:
  • Frying: Heat oil and fry until golden and crispy
  • Baking: Bake at 375°F (190°C) for 15–20 minutes
  • Air Frying: Cook at 180°C for 12–15 minutes

Step 6: Serve Hot

  • Serve immediately with your favorite dips like salsa, ketchup, or garlic mayo.
