Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup cooked breakfast sausage crumbled
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons maple syrup plus extra for serving

Instructions
 

Step 1: Preheat the oven

  • Preheat your oven to 375°F (190°C). Lightly grease your mini muffin tin.

Step 2: Cook the sausage

  • In a skillet, cook the sausage until browned and fully cooked. Drain excess grease and set aside.

Step 3: Mix dry ingredients

  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Step 4: Mix wet ingredients

  • In another bowl, whisk milk, egg, melted butter, vanilla extract, and maple syrup.

Step 5: Combine batter

  • Pour the wet ingredients into the dry ingredients and mix gently until just combined.

Step 6: Add fillings

  • Fold in the cooked sausage and shredded cheese.

Step 7: Fill muffin tin

  • Spoon the batter into each mini muffin cup, filling about 3/4 full.

Step 8: Bake

  • Bake for 12–15 minutes or until the tops are golden and a toothpick comes out clean.

Step 9: Cool and serve

  • Let cool slightly before removing. Serve warm with extra maple syrup.
