Ingredients
  

  • 3 large yellow onions thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme fresh or dried
  • 4 cups beef broth or vegetable broth
  • 8 oz pasta such as fettuccine or spaghetti, broken in half
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyère cheese or mozzarella as substitute
  • 1/4 cup grated Parmesan cheese

Optional garnish:

  • Fresh parsley
  • Extra cheese on top

Instructions
 

Step 1: Caramelize the onions

  • In a large pot, melt butter with olive oil over medium heat. Add sliced onions and cook slowly, stirring often, for about 20–25 minutes until deep golden brown.

Step 2: Add garlic and seasoning

  • Stir in garlic, salt, pepper, and thyme. Cook for another 1–2 minutes until fragrant.

Step 3: Add broth

  • Pour in the broth and bring to a gentle simmer. Scrape the bottom to release all the flavor.

Step 4: Add pasta

  • Add the pasta directly into the pot. Stir well and let it cook in the broth, stirring occasionally.

Step 5: Cook until tender

  • Simmer until the pasta is tender and most of the liquid is absorbed, about 10–12 minutes.

Step 6: Add cream and cheese

  • Stir in heavy cream, Gruyère cheese, and Parmesan cheese until melted and creamy.

Step 7: Adjust seasoning

  • Taste and adjust salt and pepper if needed.

Step 8: Serve

  • Garnish with parsley and extra cheese, then serve warm.
