Ingredients
  

For the salmon:

  • 4 salmon fillets about 6 oz each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

For the lemon orzo:

  • 1 1/2 cups orzo pasta
  • 3 cups chicken or vegetable broth
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1 cup baby spinach optional
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions
 

Step 1: Season the salmon

  • Pat the salmon dry and season both sides with salt, pepper, and garlic powder.

Step 2: Sear the salmon

  • Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 3–4 minutes per side until golden. Remove and set aside.

Step 3: Start the orzo base

  • In the same skillet, melt butter and sauté garlic until fragrant.

Step 4: Toast the orzo

  • Add orzo and stir for 1–2 minutes until lightly golden.

Step 5: Add broth

  • Pour in broth and stir. Let it simmer, stirring occasionally, until orzo becomes tender and creamy.

Step 6: Add lemon and cream

  • Stir in lemon juice, lemon zest, and heavy cream. Mix well until smooth.

Step 7: Add cheese and greens

  • Add Parmesan cheese and baby spinach. Stir until spinach wilts.

Step 8: Return salmon

  • Place salmon fillets back into the skillet on top of the orzo. Cover and let simmer for 3–5 minutes.

Step 9: Finish and garnish

  • Sprinkle fresh parsley and adjust seasoning with salt and pepper.
