Ingredients
  

For the chicken:

  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

For the vegetables:

  • 2 cups baby potatoes halved
  • 1 1/2 cups broccoli florets
  • 1 cup carrots sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions
 

Step 1: Preheat the oven

  • Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.

Step 2: Prepare the vegetables

  • In a bowl, toss potatoes, broccoli, and carrots with olive oil, salt, pepper, and paprika. Spread them evenly on the sheet pan.

Step 3: Prepare the chicken coating

  • In another bowl, mix Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.

Step 4: Coat the chicken

  • Brush chicken breasts with olive oil, then coat them evenly with the Parmesan mixture.
