Equipment

  • Large skillet or frying pan (preferably heavy-bottomed)
  • Wooden spoon or spatula
  • Whisk (very important for smooth gravy)
  • Measuring cups and spoons
  • Serving spoon

Ingredients

  • 500 g breakfast sausage mild or spicy
  • 3 tablespoons all-purpose flour
  • 2 ½ cups whole milk for creaminess
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt adjust to taste
  • 1 teaspoon freshly ground black pepper

Optional additions:

  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

Step 1: Cook the sausage

  • Place a large skillet over medium heat and add the sausage. Break it into small crumbles using a wooden spoon. Let it cook slowly until browned and fully cooked. You want a nice golden color because that’s where the flavor builds.

Step 2: Add butter

  • Once the sausage is cooked, add butter directly into the skillet. Let it melt completely into the sausage drippings. This step adds richness and helps create a smooth gravy.

Step 3: Add flour

  • Sprinkle the flour evenly over the sausage. Stir well so every piece is coated. Let it cook for 1–2 minutes. This removes the raw flour taste and forms the base of your gravy.

Step 4: Slowly add milk

  • Now comes the important part. Slowly pour in the milk while whisking continuously. Don’t rush—this prevents lumps and ensures a silky texture.

Step 5: Simmer and thicken

  • Reduce the heat slightly and let the gravy simmer. Stir frequently as it thickens. You’ll notice it becoming creamy and smooth within a few minutes.

Step 6: Season

  • Add salt and black pepper. Taste and adjust. The pepper is what gives sausage gravy its signature flavor, so don’t be shy—but balance it to your preference.

Step 7: Serve

  • Serve the gravy hot over freshly baked biscuits. It should be thick enough to coat a spoon but still pourable.
