For the pasta and filling:
- 20 –24 jumbo pasta shells
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion finely chopped
- 3 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
For the cheese mixture:
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese divided
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh parsley chopped (or 1 tablespoon dried)
For the sauce:
- 2 cups marinara sauce store-bought or homemade
Step 1: Cook the pasta shells
Step 2: Prepare the beef filling
In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 3–4 minutes until soft. Stir in garlic and cook for another minute.
Add the ground beef, breaking it apart with a spoon. Cook until browned and fully cooked. Season with salt, pepper, and Italian seasoning. Remove from heat and let it cool slightly.
Step 3: Make the cheese mixture
In a mixing bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan cheese, egg, and parsley. Mix until smooth and well combined.
Step 5: Assemble the dish
Preheat your oven to 180°C (350°F). Spread a thin layer of marinara sauce on the bottom of your baking dish.
Carefully stuff each shell with the beef and cheese mixture and place them in the dish. Once all shells are filled, pour the remaining sauce over the top.
Sprinkle the remaining mozzarella cheese evenly over everything.
